About the Maker
Watanabe Sahei Shoten
Tochigi Prefecture, Japan

Watanabe Sahei Shoten is a sake brewery in Tochigi Prefecture with a long tradition of meticulous Junmai brewing. Their signature lines — Junmai Daiginjo Seikai, Nikko Homare Omachi, Kimoto Junmai Sontoku — emphasize the Tochigi water source and locally-grown sake rice varieties. The brewery has retained traditional kimoto fermentation methods for select labels, producing sake with notable depth and umami. A quiet favorite among Japanese sake sommeliers.
